Cinnamon

Cinnamon stands as one of the most exquisite sweet spices, prized for its warm and aromatic flavor. This spice is commercially cultivated in various regions worldwide, including India, Africa, South America, the West Indies, and Indonesia. Cinnamon is derived from the inner bark of the bushy cinnamon tree. The inner bark is carefully harvested and dried to form cinnamon sticks, which are used in a wide range of culinary applications. Cinnamon adds depth and complexity to both alcoholic and non-alcoholic beverages, enhances the flavor of curries, pickles, and garam masala, and infuses teas with its delightful aroma and taste. Beyond its culinary uses, cinnamon is also valued for its potential health benefits, including anti-inflammatory and antioxidant properties. With its versatility and rich flavor profile, cinnamon holds a prominent place in cuisines around the world, adding warmth and richness to dishes and beverages alike.

The cinnamon tree grows in moist well-drained soils and rarely reaches more than 40ft in height.
When a cinnamon tree is around two years old, cultivators coppice or cut back the plant to the size of a 3ft and cover it with soil. This technique causes it to grow like a bush with new shoots emerging out of the sides by the following year.
Cinnamon’s are distinctly sweet, yet smokey and has a strong, woody-bitter flavour.
The shoots having a thickness and uniform brown colour are ideal for bark extraction and is usually harvested from September to November.
