Cinnamon is one of the finest sweet spices, a tropical medium-sized, bushy evergreen tree15-m (50 ft) high with strong antioxidant activity. It is cultivated commercially in India, Africa, South America, the West Indies and Indonesia. The spice is reddish-brown and has a sweet, warm, spicy, woody aroma. The cinnamon tree grows in moist well-drained soils and rarely reaches more than 40ft in height.
When a cinnamon tree is around two years old, cultivators coppice or cut back the plant to the size of a 3ft and cover it with soil. This technique causes it to grow like a bush with new shoots emerging out of the sides by the following year.
Cinnamon’s are distinctly sweet, yet smokey and has a strong, woody-bitter flavour.
The shoots having a thickness and uniform brown colour are ideal for bark extraction and is usually harvested from September to November.
